Nutty date energy bars

These bars are full of energy and will be great as a morning snack before the fasts start. Great for all as super nutrient rich and slow release carbohydrates to sustain you through the day.


Also great as a pre or post workout snack!


Ingredients:

  • 250g oats

  • 40g desiccated coconut

  • 40g pumpkin seeds

  • 40g flaked almonds/chopped almonds

  • 200g pitted dates/date paste

  • 85g clear honey

  • 100g crunchy nut butter of choice. cashew/almond works well

  • 1tbsp coconut oil/butter

  • 1.5 tsp ground cinnamon

  • 1.5 tsp ground cinnamon

  • 1 tbsp cacao nibs

  • 2 tbsp milled organic flax, sunflower pumpkin & gogi berry mix (linwoods)- optional

  • Pinch of salt


Method:

  1. Line a brownie tray with greaseproof and preheat an oven to 160 degrees C.

  2. Combine the oats, coconut, pumpkin seeds and almonds and spread out on a large baking tray. Bake for 20 minutes, tossing occasionally, until golden ensuring it doesn't burn and is lightly toasted.

  3. Meanwhile, blitz the dates in a food processor to a smooth paste.

  4. Once smooth, place in a saucepan and add the honey, nut butter, coconut oil, cinnamon, 3tbsp water, cacao nibs, flax and salt.

  5. Once all combined, tip the mixture into the lined tin, smoothing the surface with the back of a spoon. Chill until firm and slice into bars/squares.
