40g pumpkin seeds
40g flaked almonds/chopped almonds
200g pitted dates/date paste
85g clear honey
100g crunchy nut butter of choice. cashew/almond works well

1 tbsp cacao nibs
2 tbsp milled organic flax, sunflower pumpkin & gogi berry mix (linwoods)- optional
Pinch of salt
Method:
Line a brownie tray with greaseproof and preheat an oven to 160 degrees C.
Combine the oats, coconut, pumpkin seeds and almonds and spread out on a large baking tray. Bake for 20 minutes, tossing occasionally, until golden ensuring it doesn't burn and is lightly toasted.
Meanwhile, blitz the dates in a food processor to a smooth paste.
Once smooth, place in a saucepan and add the honey, nut butter, coconut oil, cinnamon, 3tbsp water, cacao nibs, flax and salt.
Once all combined, tip the mixture into the lined tin, smoothing the surface with the back of a spoon. Chill until firm and slice into bars/squares.
