Apricots are a great source of vitamins, minerals and antioxidants. They’re rich in Iron and also contain high levels of Vitamin C, Vitamin A, Magnesium (has calming qualities) and fibrous- NHS.
I always choose the unsulphured dried Apricots which are a rich brown colour and not the yellow ones that you usually find.
They are also super sweet so you don’t need much to hit the sweet spot.
1 ½ cup (organic if you can) unsulphured dried apricots
½ cup raisins
¼ cup almonds
¼ cup walnuts- great for the brown
3 tbsp desiccated unsweetened coconut
1 tbsp @linwoods flax and goji berry mix
1 tsp vanilla essence
½ tsp sweet cinnamon powder
1tbsp coconut oil - optional (helps to bind a little better)
Transfer all the ingredients in a food processor.
Mix until all combined.
Roll the mix into small balls.
Roll into desiccated coconut if you wish.
Leave in the fridge and enjoy 😊
