Apricot Energy balls




Apricots are a great source of vitamins, minerals and antioxidants. They’re rich in Iron and also contain high levels of Vitamin C, Vitamin A, Magnesium (has calming qualities) and fibrous- NHS.


I always choose the unsulphured dried Apricots which are a rich brown colour and not the yellow ones that you usually find.


They are also super sweet so you don’t need much to hit the sweet spot.


Ingredients:

  • 1 ½ cup (organic if you can) unsulphured dried apricots

  • ½ cup raisins

  • ¼ cup almonds

  • ¼ cup walnuts- great for the brown

  • 3 tbsp desiccated unsweetened coconut

  • 1 tbsp @linwoods flax and goji berry mix

  • 1 tsp vanilla essence

  • ½ tsp sweet cinnamon powder

  • 1tbsp coconut oil - optional (helps to bind a little better)


Method:

  1. Transfer all the ingredients in a food processor.

  2. Mix until all combined.

  3. Roll the mix into small balls.

  4. Roll into desiccated coconut if you wish.

  5. Leave in the fridge and enjoy 😊
