Brown rice crispy treats

Chewy and crispy all at the same time. Soooooo delicious!

My kids are always wishing they could eat rice krispy treats so here’s my take on them! No refined sugar in these.

I worked this out to have around approximately 6g of protein and 170 cals.


Weekends are never complete without some sort of baking!


Makes around 16 little squares


Ingredients:

  • 3 cups Brown puffed rice cereal @rudehealth or rice crispies

  • ⅓ cup honey

  • ¾ cup organic peanut butter

  • 2 tbsp butter /coconut oil

  • 1 tsp vanilla extract


Topped with 95 % dark chocolate if you want to be a little indulgent


Method:

  1. Line a square brownie baking tin with greaseproof paper.

  2. In a pan, melt the butter/oil, peanut butter, honey and vanilla extract on low heat. Add a teeny pinch of salt if none in the peanut butter.

  3. Once melted, add the puffed rice and stir until all mixed.

  4. Press down firmly into the brownie tin.

  5. Melt the chocolate in a pan and pour a thin layer onto the puffed rice mix.

  6. Place it in the freezer for half an hour, because quite frankly, we are rather impatient! Lol.


Enjoy!!! Place the rest in the fridge.


I am not sure how long they last as my family consumed the whole lot;)
