My Kids LOVE granola but I won’t buy it as it’s usually packed with loads of sugar.
Recently, fed up with eating porridge daily... they were super happy to tuck into this and ended up devouring it for breakfast, snack and desert time! It didn’t last long!
Super YUMMY and full of good fats and carbs, I’m happy for them to indulge.

So here’s how, although you can pretty much use up whatever you have and free style it.
Ingredients:
2 Cup oats
¾ cup nuts of your choice. I used up whatever I had. Almonds, walnuts, pecans
¼ pumpkin seeds
¾ cup dessicated coconut
½ cup chopped dried fruit (Iused dates, apricots, goji berries)
¼ cup melted coconut oil
¼ cup maple syrup/honey
Method:
Preheat the oven to 160 degrees C.
Add all the dry ingredients together apart from the dried fruit in a mixing bowl and mix it together.
Then add the oil and the and the maple syrup.
Spread the mixture evenly onto the baking sheet and pack it down. Bake for 10-15 minutes.
Take it out of the oven, stir and pack down again.
Cook for a further 10 minutes or until brown.
Cool and place in an air tight container.
Cooking times may vary.
It can be frozen too for a rainy day.
Should keep for a few weeks but mine went in 2 days!
