Pea and Mint Soup

Green! My absolute favourite colour and If I were to choose a colour to eat all day I would choose it.


What colour food would you choose? Love to know…


Vibrant and fresh and so light on the tongue and stomach too. The humble pea really doesn’t get the respect that it deserves!


Ingredients:

  • Garlic

  • Large handful of mint

  • 1 onion or a bunch of spring onions (I didn’t have any but would usually use)

  • 500g frozen petit pois

  • 2 @kalo organic stock cubes

  • Salt and pepper to season


Method:

  1. In a blender, blitz the onion and mint with some garlic.

  2. Add a little knob of butter/oil to the pan and add this mix for a couple of minutes.

  3. Add the frozen peas

  4. Add 2 stock cubes (crumbled) and just enough boiling water to cover the peas.

  5. Simmer for about 15 minutes or so. Don’t boil.

  6. Blend with a handheld mixer and serve lovely and warm with some pine nuts and a dollop of creme fraiche. I used @yeovalley half fat.

  7. Dunk in some crusty bread if you like.
