Quinoa and Avocado Salad




This salad is so zingy and delicious you’ll want more and more!


Benefits of Quinoa

  • High in protein with a wide range of amino acid profile hence, good for vegetarians and vegans

  • High in fibre

  • Good source of manganese which is required for a healthy metabolism

  • Good source of antioxidants

  • Good source of iron, essential for good health

  • Good source of carbohydrate

Serves 4 as a side


Ingredients:

  • 2 cups cooked cooled quinoa (cook according to packet instructions)

  • 1 chopped cucumber

  • 1 chopped carrot

  • 1 chopped yellow/red pepper

  • Very Large handful of fresh mint

  • Very Large handful of fresh coriander/parsley

  • 1-2 ripe avocado depending on size

  • Pomegranate seeds

  • Handful pumpkin seeds

  • Handful of chopped walnuts

  • Cracked black pepper

  • Pinch of rock salt

  • Can add black beans too for an added fibre, nutrient boost

Dressing:

  • Juice of lemon

  • 1 tsp apple cider vinegar

  • 2-3 tbsp of organic extra virgin olive oil (use a good oil)

  • Zaatar

  • Cracked black pepper

Method:

  1. Mix all the ingredients together and add the dressing to it and stir.

  2. Serve immediately
