Spiced Carrot and Cumin Soup

This has to be my all time favourite soup and it's packed with flavour with the added bonus of being high in protein too. It's super easy to make too, which is a winner in my eyes!
Organic ghee/rapeseed oil
1 tbsp cumin seeds
Pinch of chilli flakes or to taste
500 g chopped carrots. I used frozen for ease
3/4 full of washed dried red lentils
Vegetable Stock to cover the carrots etc or around 1l
In a dry pan add the cumin seeds and chilli flakes and heat on medium for a minute or until it releases the aroma.
Add a tsp of the ghee or oil and add the carrots and give it a stir.
Add the red lentils and stock.
Bring to the boil and let it simmer for around 20 minutes or until the carrots and lentils are softened.
Blitz until smooth and enjoy. So nourishing and super delicious.
